Two cautions worth memorizing: a doubled soup can take 30–60 minutes just to reach a simmer in a large pot, and a doubled casserole in one pan often needs 15–25% more time but risks a dry top — cover it for the first part, then uncover to brown.

Doubling the amount doesn’t change the temperature food needs to be done. Chicken is still safe at 165°F whether the batch is single or double. What changes is how long the center takes to get there.
