Grams Are Weight, Cups Are Volume
Professional recipes — and most of the world outside the U.S. — measure ingredients by weight. Home recipes in the U.S. measure by volume. So the moment you find a great recipe written in grams, you hit the wall: how do you convert a recipe from grams to cups without a kitchen scale and without wrecking the ratios?
The honest answer: you can’t do it perfectly, because a cup of flour and a cup of sugar don’t weigh the same. But you can get close enough for most cooking, and exact enough for baking if you use the right ingredient weights.
This is the single most important thing to understand before you start:
- Grams measure mass. They don’t care how you scoop.
- Cups measure volume. They depend entirely on how densely the ingredient sits in the cup.
That’s why “1 cup” ranges from about 80 g (powdered sugar, loosely filled) to 340 g (honey, dense). A flat conversion like “1 cup = 240 g” is only true for water. Use it for flour and your cake collapses.

These are lightly spooned-and-leveled cup measures. Pack brown sugar; don’t pack flour.
The Step-by-Step Conversion
- Find the ingredient’s cup weight. Use the table above or a converter — don’t assume 240 g per cup.
- Divide the gram amount by that weight. 250 g flour ÷ 120 g per cup ≈ 2.08 cups.
- Round to a measurable fraction. 2.08 cups → “2 cups” (or 2 cups + 1 tbsp if you’re precise).
- Repeat for every ingredient. Each one has its own cup weight.
- Double-check baking. For cakes and bread, prefer buying a scale — weight is the reliable path.

Why This Gets Tricky in Baking
Baking is sensitive. A 10% error in flour weight changes the texture noticeably. Volume measuring is notoriously inconsistent — the same “1 cup flour” can vary by 20–30% depending on whether you scoop or spoon. A Worked Example
A European cookie recipe lists (for 24 cookies):
- 270 g flour, 227 g butter, 150 g sugar, 50 g egg, 340 g chocolate.
Convert to cups:
- Flour: 270 ÷ 120 ≈ 2¼ cups
- Butter: 227 g ≈ 1 cup (2 sticks)
- Sugar: 150 ÷ 200 = 0.75 → ¾ cup
- Egg: 50 g ≈ 1 large egg
- Chocolate: 340 ÷ 170 ≈ 2 cups
